Healthy Coconut Brownies Recipe

I am the biggest brownies fan ever, let’s admit it! But brownies are not your everyday thing, let’s admit that too, because it’s always very hard if not impossible to find a balance between healthy ingredients and that gooey results. Truth is, I’ve tried so many different healthy brownies recipes, but they never really were the same gooey, moistened, indulgent thing.

I have experimented with flour, and I believe I have found a way to replace white flour with a healthier alternative almost completely, but what really puts me off is butter. Because, let’s face it, you can’t really achieve that same result without butter.

Recently though, I have discovered coconut butter (this one if you’re wondering!), 100% organic and all, and apparently also way healthier than dairy-based or other vegetal butters, containing lots of healthy fats and more good stuff for your body. Of course it didn’t take me long to realize that it was the perfect solution to my big brownies dilemma!

This recipe makes for sweet, indulgent, decadent and gooey coconut healthy brownies. The coconut butter adds a bit of a delicate nutty flavour to them without being overwhelming, but interesting and gentle instead. Use extra dark chocolate for extra flavour!

Makes approximately 12 brownies…

Coconut Healthy Brownies

Prep Time: 15 minutes

Cook Time: 35 minutes

Total Time: 50 minutes

Serving Size: 12 medium brownies

Coconut Healthy Brownies


  • 150g dark chocolate
  • 60g coconut butter
  • 190g raw brown sugar
  • 1/2 tbsp instant espresso powder
  • 3 medium eggs
  • 80g white flour
  • 1/2 tsp baking powder
  • A pinch of salt

  • Icing sugar or coconut flakes to decorate


01 :: Preheat the oven to 150°C.

02 :: Chop the chocolate into cubes and place it in a bowl together with the coconut butter. Melt them together by placing the bowl over a saucepan of simmering water. Then leave to cool.

03 :: In a large bowl mix together the eggs, sugar and coffee powder until nicely incorporated.

04 :: Add the chocolate and coconut butter mix and stir. Then add the flour, baking powder and salt all at once and stir again nicely.

05 :: Transfer the brownie batter in a rectangular baking tin lined with baking paper and pop it in the oven for 30-35 minutes. It might be worth cheking them out around minute 25 because you don't want to overcook them or they'll loose the gooeynees.

06 :: Let them cool down for 10-20 minutes, then cut into squares and sprinkle some coconut flakes (or icing sugar if you prefer) on top! Enjoy!

OK so, October has been the month of my first cold, of an endless hours spent in front of my laptop wanting to cry and without knowing where to begin with work, so I’m almost happy it’s finally over, but on the other hand it has been the month of mist and yellow leaves, roasted chestnuts almost every Sunday, countless cups of tea, the first coat and the first scarf, and in general the time I rediscovered my love for Autumn… and it’s sad to think one month of my favourite season has already gone by.

But there’s Christmas around the corner, so I’m not complaining! In the meanwhile here are my October favourites…

This has been the first month when the wheather outside was chilly enough to properly enjoy a cup of tea, and with that, I decided it was about time that I tried out some new flavours. Turns out, I did buy a new tea, still the notes are always the same! What can I say? I’m such a lover of lavender, chamomile and lemon balm – put them all into one single blend, add cute packagings like only Clipper can do, and I’m sold!

I love sweet teas and this Snore & Peace number is almost already perfect for me without the addition of extra sugar (but I’d still add one teaspoon just in case, you know!). It’s basically the perfect nighttime infusion, but I still do enjoy it in the afternoon too… so relaxing and calming in front of a huge pile of work, you know…

On a different note, in the last week of September and throughout all the month of October, I’ve been loving this coconut jam from Coconut Merchant (my trusty retailer of huge bottles of coconut oil, if you’re wondering). It’s made of 100% organic coconut and tastes quite a bit like coconut sugar (that is amazing to me!). I guess it’s a bit of a healthier alternative to processed-sugared jams or Nutella (although it does not taste like that at all) – and I love it on my toasts in the morning! Yes, I’ve already gone through two jars all by own…

I don’t know if it’s just me, but my makeup products seem to finish up all at the same time! And October was that time for me. While repurchasing some old favourites, I thought I’d give a new foundation a go this round…

I tried a sample of this Urban Decay Naked Skin foundation back in May and I loved the texture and the finish so much. The only thing I’m always a bit put off by is the price of high end foundations, but this month I decided to finally bite the bullet and buy it. I know I’m super late on the bandwagon, but I’d suggest this to anyone with oily skin wanting a nice and natural but not super matte look that doesn’t feel heavy on the skin and last all day!

This is 100% a new favourite!

Talking of favourites, ahhh… I can’t explain how much I love my new Nike Juvenate Sneakers at words! I have been raving about them all time on social media!

You might remember I talked a bit about getting into exercising a little more and especially walking a lot more back in August: I have been after investing in a nice and comfy pair of sneakers ever since, looking in particular for some shoes I could actually also wear on a daily basis (so yes, I wanted them to be cute!). I had some pretty hard time, I can assure you, but then I found these in lilac on Zalando, super discounted, and in my size… that’s how you know it’s meant to be.

And they are indeed the most comfortable shoes to walk in – maybe not the best in the rain, but I actually never really go out for a walk when it rains, so..!

This month I was also able to finally fit into this Zara mom jeans I’ve been after for a while, and so I bought them after a quick happy dance in the changing room. Needless to say I’ve been wearing them non-stop from that very minute throughout the whole month… and I’ve also purchased that beauty of a H&M pastel scarf: so snuggly and cosy! You know I love my pastels!

Books, style and beauty favourites for September

In September I've Loved...

September is by far my all-time favourite month. It might be partly due to the fact it’s my birthday month, but I also love the feeling of a fresh new start it always comes with, and the fact that Autumn it’s officially here now! This month I’ve found time to get cosy with a pair of books, the very first sweater of the season and a few too many cups of coffee, and I can’t wait to share my favourites with you today!

Lavera Basis Sensitive Cleansing Gel

This cleanser – I got it before our holiday in August, when I needed to stock up on my usual Lavera cleanser but couldn’t find it anywhere. I also was very keen on buying something a little bit more gentle instead of what I usually used (which I loved, but was a bit harsh, doubling up as a scrub and intense face mask). I trust Lavera so much by now, that I was sure their Basis Sensitive Cleansing Gel wouldn’t have disappointed me. And in fact, I love it! It’s super gentle but always leave even my oily skin feeling fresh and non-sticky. And the scent is absolutely amazing, calming and refreshing, making my daily cleansing ritual something I look forward to everyday!

This month I’ve definitely rediscovered my love for reading, and I’m sure I must be grateful to this couple of beautiful books that were just the kind of thing I needed to get back into a proper reading routine!

I’ve actually read Girls In White Dresses during our Summer holiday, and it was such a perfect light but beautiful beach read to me. I loved the fact the author is touching such fundamental arguments for a 20-something like me in such a light and positive way until the very end, even when everything seems to be falling apart. And everything the three main characters are struggling with felt so very real to me, so relatable, that I bet anyone around my same age would enjoy it and impersonate into at least one of the girls.

On the other hand, this month I’ve also read Me Before You, which wasn’t totally as much as a light read, but something that you can tell from the very beginning will make you very emotional by the end. And I loved every single line of it! We also went to see the movie this month, which I totally suggest watching only with tissues on hand, but it was as lovely as much as the book indeed!

You’ll know by now about my obsession for coffee and for independent businesses offering quality coffee while also having a special attention for enviroment. And Five Elephant is exactly about that. I especially fell in love with their El Naranjal Espresso Coffee, with, as they promise, blueberry cake and tropical fruits notes. It definitely is on the sweet side, which I totally don’t mind, and has its own unique flavour – that I love!

With Autumn being officially around, how could I not include a candle into this favourites post? During my latest trip to H&M Home, I couldn’t help but fall in love with the clean fresh sent of their Cotton Candle of which I got a mini version immediately after! I love the fact that, although being very small, it diffuses a whole lot of scent filling up the room with the nice smell of freshly washed clothes and linen. Totally a great scent to start with this season, before moving on to spicy and very autumnal ones!

On the style front, I’ve been trying to update my wardrobe a bit for the new season, and I’ve fallen in love with this lilac Mint&Berry sweater I got recently, or actually with the entire brand really! I’m totally into lilac and lavender this year, hence why I’ve been buying everything in the same tone – shoes included! But that’s a story for another day..!
