This year I was lucky enough to spend my birthday in Tuscany, in one of the most beautiful coves I’ve ever seen, but that meant we hadn’t some proper time to celebrate. Yes, I bought myself cake for breakfast (of course!) and had a lovely dinner-for-two at one of the cosy restaurants facing the local harbor (not bad, eh!), but I hadn’t got the chance of properly putting together a very informal, but still, birthday “party”.

And so I thought we could simply pop some nice decorations on and bake some biscuits and cookies, and have a cosy “cookie bar” table all set up, instead of the usual tea break, that gave us a chance to properly celebrate! The table set up in particular, was definitely inspired by Talking Tables – they were kind enough to send over all the material (the cutest paper straws obviously included!) to put together a birthday table you can hardly forget, with a mint and peach colour scheme, all from their Mix & Match range.

Instead of serving pre-bought sweets, we had fun baking some cookies and biscuits and were happy to transform the sweet bar in a cookie bar, serving the biggest amount of chocolate chip cookies I’ve ever baked into a giant cocktail glass! We also prepared a couple of “cocktail” alternatives, one with some simple freshly squeezed orange juice and the other with said orange juice with a small addition of rum for anyone fancying an alcoholic alternative, and then bottled them all up in the cutest mini bottles, giving all the guests the chance of picking the paper straw they loved the most!

Healthy Carrot + Chocolate Muffins

If there’s one thing I start missing when around the last month of summertime, that is surely baking. With the heat calming down slightly, this last week saw a couple of nostalgic baking sections, doing my favourite thing of them all: testing and trying new recipes!

This one was firstly properly put to the test last week by my mum, and, based on my grading scale of how well and quickly they went down, these were on top of the list of new recipes we should have made again! It’s basically incredible how these little carrot bites maintain a sort of gooeyness and softness even if they’re made of whole wheat flour – you can’t even tell! And I’m such a fan of the combination of carrot + chocolate..! They make for the perfect healthy but indulgent afternoon treat, that’s for sure!

Healthy Carrot + Chocolate Muffins

Healthy Carrot + Chocolate Muffins

Ingredients

  • For the base...
  • 3 medium carrots
  • 110g vegetable oil
  • 3 eggs
  • 150g raw brown sugar
  • 90g rice flour
  • 150g whole wheat flour
  • juice of 1 lemon
  • 1/4 teaspoon baking soda


  • For the glaze...
  • 50g dark chocolate
  • 1 tablespoon raw brown sugar
  • A splash of water

Instructions

01 :: Preheat the oven to 170°C.

02 :: Wash thoroughly and peel the carrots, then ruffly chop them into pieces and place them in a food processor together with the vegetable oil and eggs. Then blend until smooth.

03 :: In a large bowl, sift the flours and add the sugar and give them all a nice stir. Pour the carrot mixture in and stir nicely again. If too sticky, add a splash of water - the mix should be quite runny.

04 :: In a glass, squeeze one lemon and add the baking soda. Use a teaspoon to quickly stir, allowing the mixture to rise and create bubbles. This will create a sort of instant baking yeast that will keep your muffins soft and chewy but will make them rise extremely nicely!

05 :: Pour the baking soda and lemon mixture into the muffin batter and stir well. Spread the batter into 12 medium muffin moulds or paper cups and bake in the oven for 35 minutes.

06 :: Check with a fork the middle of one muffin before removing them from the oven. Then leave them cool down completely before moving on with the glaze.

07 :: In a saucepan, melt down the chocolate with the sugar and a splash of water until nice and runny. Use a spatula to spread the chocolate glaze on top of each carrot muffin, garnish with nuts, granola or chocolate chips and then pop them all in the fridge until the chocolate has hardened completely.

08 :: Remove from the fridge 5-10 minutes before serving and enjoy!

I can already picture myself enjoying these all autumn long – but they make for the best summertime afternoon treat as well, if eaten still cold and paired with freshly made chocolate milkshake 😉

I’ve never been one who have found some sort of interest into supplements by any means, so I was a little reluctant when I was firstly introduced to the new VITL Greens. But I knew the brand since a while and have had the pleasure of working with them at a couple of recipes in the past, and after having a quick look at the ingredients, I was sold even before coming to the “all-natural, vegan, gluten free” point!

Each sachet contains up to 19 superfoods, extremely healthy and good for both immune health, energy levels but also skin, nails and hair health, including between the others maca, tumeric, goji berries, seagreens, spirulina, green tea, kale leaf and much more!

The one thing I was quite concerned about at first was the extra dark and deep green colour of the powder and ‘what will it taste like?’. I’ll be honest when saying I wasn’t the biggest fan of the taste at first, but I was surprised that it didn’t taste bitter in the slightest! But with some testing and trials, I’ve actually come to enjoy the taste quite a bit! Especially into very cold water, maybe with the addition of a couple of ice cubes – just perfect for this Summer heat!

I’ve been having one dose of Greens every single day since a I got them 3-4 weeks ago, and I’m extremely happy about them. I’ve been experimenting with recipes (especially smoothies) to have them with, and what I love the most is that they’re giving my body a chance to digest some of the foods I wouldn’t otherwise ever eat, like kale or broccoli, that are surely not my favourites, but also seaweeds and beetroot, that I don’t think body have ever known before!

My number one favourite way of implementing VITL Greens in my diet though, is by popping them in my smoothies. I rarely enjoy green smoothies, so anything that could make them taste a little bit better is totally up my street and the fact that VITL Greens are vanilla flavoured gives them a whole bunch of brownie points! I’d blend them with some banana, dates and some other fruits and I’d be good to go.

Recently though, after some more testing, I’ve come up with the most delicious vegan chocolate smoothie recipe of them all, and I couldn’t refrain me from sharing it in this post today! This recipe makes for the best indulging and intense chocolate smoothie, only featuring all-natural ingredients, good for your body and health! Thick, chocolate-y, dark but sweet! The dates naturally sweeten the mixture, but if you like things on the sweet side I’d suggest to add a splash of agave syrup.

This recipes is for one serving.

Chocolate Vegan Greens Smoothie

Chocolate Vegan Greens Smoothie

Ingredients

  • 1 ripe banana (from the fridge)
  • 3 dates
  • 3 teaspoons raw cocoa powder
  • 6-7 almonds
  • 1 teaspoon of coconut oil
  • 1 sachet of VITL Greens
  • 100ml soy or almond milk (from the fridge)
  • (Optional) A splash of agave syrup

Instructions

01 :: Slice your banana into big chunks and pop it into your smoothie blender, add in the stoned dates, the cocoa powder, the almonds, coconut oil, VITL Greens and your non-dairy milk of choice.

02 :: Blend on high speed for a few seconds until smooth. Taste and add a splash of agave syrup if you fancy some extra sweetness!

03 :: Serve into a tall glass with a straw and enjoy fresh!
